PAM® Original No-Stick Cooking Spray
1/4 cup chopped onions
1/2 cup red plum jam
1 tablespoon red wine vinegar
1 teaspoon La Choy® Lite Soy Sauce
1/4 teaspoon ground ginger
1 small plum, pitted, cut into 8 wedges
1 pound pork tenderloin, well trimmed, cut into 8 slices
Ground red pepper
Hot cooked noodles, optional

Spray small nonstick skillet with cooking spray; heat over medium heat. Add onions; cook 7 minutes, or until onions are tender, stirring occasionally. Reduce heat to low. Add jam, vinegar, soy sauce and ginger; mix well. Cook 2 minutes, or until jam is melted, stirring occasionally. Stir in plums. Remove from heat; cover to keep warm.
Pound each pork slice with meat mallet to 1-inch thickness. Sprinkle both sides of each pork slice lightly with red pepper.
Spray medium nonstick skillet with cooking spray; heat over medium-high heat. Add pork; cook 8 minutes, or just until no longer pink, turning after 4 minutes. Serve over noodles, if desired, topped with the plum sauce.
