Rib eye steak bursts with flavor when topped with fire roasted tomatoes in basil pesto

  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, drained
  • 1/2 cup refrigerated basil pesto
  • PAM® Original No-Stick Cooking Spray
  • 4 boneless beef rib-eye steaks (4 steaks = 1-1/2 lb)

Purchase ingredients from Peapod or Amazon

  1. Preheat broiler. Mix drained tomatoes and pesto in small bowl until blended; set aside. Spray rack of broiler pan with cooking spray. Place steaks on rack; broil 4 to 6 inches from heat 5 minutes.
  2. Remove from broiler. Turn steaks over; spread tomato mixture over steaks. Broil 5 to 6 minutes more or until medium done (160°F).

PERFECT MEAL May 08, 2013

There is no other words to describe this dish than TO DIE FOR!!! I bought a small jar of Classico Basil and Garlic Pesto and I used a little over a half a cup of it in the tomato mixture. Then boiled up about 4 servings of angel hair pasta and mixed the rest of it in the hot pasta. I served the steaks over the pasta and served it with a fresh tossed salad I made with homemade ranch over romaine lettuce with the shredded Parmesan. If you love Italian, you can't go wrong with this recipe!!! Next time, I am going to make this with Rotel and beans over the steaks and serve it over Spanish rice with a side of Mexican corn (my husband prefers Mexican food over Italian).

Just made this for the first time tonight. Oh my goodness, my whole family loved it, even my extremely picky two year old! My husband who does not like to try new things was raving on and on about how excellent this dish was! I will most definitely be making this recipe again!! Made this dish with my boyfriend last night, and we both gobbled it up! I loved the combination of pesto and tomatoes, though using 1/2 cup seemed to be a bit too much pesto. I'd recommend using a little less, but otherwise this recipe was perfect, simple and delicious! We will be making this again, and are already fighting over the leftovers.
