1 loaf (14 oz each) French bread, cut in 1-inch cubes
1 pound Odom's Tennessee Pride® Mild Country Sausage
1/2 cup butter
1 small onion, chopped (about 1 cup)
1 cup chopped celery
1 tablespoon chopped fresh sage leaves
1 tablespoon fresh thyme
1-1/2 cups chicken stock
1 egg
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Preheat oven to 350°F. Spray 9x13-inch baking dish with cooking spray. Place bread cubes on a large baking sheet. Bake 5 to 8 minutes, until bread is dry and just barely starting to brown.
Heat a large skillet over medium heat. Cook sausage in skillet until crumbled and browned, about 5 minutes, stirring to break up the pieces. Pour cooked sausage into a large mixing bowl.
Melt butter in skillet. Add onion and celery to skillet and cook until tender, about 5 minutes, stirring occasionally. Stir in sage and thyme, cook 1 minute more. Pour into bowl with sausage.
Pour chicken stock, egg, parsley, salt, and pepper into bowl; stir well. Stir in bread cubes until blended; pour into baking dish. Cover with foil and bake 25 minutes. Remove foil and continue baking until golden brown on top, 15 to 20 minutes. Serve your traditional sausage stuffing.
