2 cups thinly sliced yellow onion
3 tablespoons avocado oil
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup water
6 eggs or plant-based alternative
6 English muffins, split, toasted
6 slices Cheddar cheese or plant-based alternative
6 slices plant-based bacon, cooked
6 tablespoons vegan mayonnaise alternative

Cook saus’ge according to package directions.
Heat oil in a large skillet over medium-high heat. Add onion; cook 10 minutes or until golden brown, stirring frequently. Add garlic powder, oregano, salt, and pepper, cook for 1 minute. Pour in water and continue stirring until most of the water has evaporated, 1 to 2 minutes.
Spray large nonstick skillet with cooking spray. Cook eggs or egg alternative to your desired doneness.
Place saus'ge on bottom of English muffins. Top with egg, bacon and cheese. Spread about a tablespoon of caramelized onions on top of cheese. Spread mayo on English muffin tops, place on top off your all mea't breakfast sammys and enjoy!
