Preheat oven to 400°F. Spray 8-inch square baking dish with cooking spray. Pour eggs into baking dish. Bake 13 to 15 minutes, until eggs are set. Cook sausage patties according to package directions.
Heat large nonstick skillet or griddle over medium heat (350°F). Stir pancake mix and water together in medium bowl. Pour about 2 tablespoons batter per pancake onto skillet or griddle. Cook 1 to 2 minutes per side, turning once when tops bubble and bottoms are lightly browned.
Use a 2-inch round biscuit cutter or a knife to cut eggs into 8 pieces. Top each egg with half a slice of cheese. Build your breakfast sandwiches with pancakes, sausage patties, and eggs and serve pancake sandwiches with syrup!
