4 cups vegetable oil, for frying
1 cup granulated sugar
1 tablespoon ground cinnamon
1 pkg (15.25 oz each) Duncan Hines® Classic Yellow Cake Mix
2 eggs
1/2 cup solid-pack pumpkin
1 tablespoon pumpkin pie spice

Heat oil in a large sauce pot over medium heat to 350°F.
Mix sugar and cinnamon in a wide bowl and set aside.
In a large bowl, mix cake mix, eggs, pumpkin, and pumpkin spice together with an electric mixer until well blended, mixture will be thick.
Drop rounded tablespoons of batter into hot oil using a cookie scoop or two spoons. Work in batches and fry until golden brown, about 3 to 4 minutes, flipping halfway through. Work close to the oil to avoid splashing and do not overcrowd, frying about 6 at a time. Donut bites are done when toothpick inserted in center comes out clean. Transfer to a paper towel-lined plate with a slotted metal spoon to drain. Repeat with remaining batter.
While still warm, toss pumpkin spice donut bites in the cinnamon sugar mixture until coated. Remove pumpkin spice donut bites to a serving plate and serve warm!
Use a thermometer to check the temperature of the oil. If the oil is too cold the dough will absorb too much oil. If the oil is too hot the outside will burn before the inside of the dough is cooked through.
