8 large carrots
1 tablespoon olive oil
2 tablespoons reduced sodium soy sauce
1 tablespoon liquid smoke
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1 teaspoon Gulden's® Spicy Brown Mustard
1 teaspoon onion powder
1 teaspoon garlic powder
PAM® Grilling Spray
8 hot dog buns
1 can (15 oz each) Gardein® Plant-Based Chili No Beans, heated according to package instructions
Shredded vegan cheddar cheese, for serving
Diced red onion, for serving
pickled jalapeno pepper slices, for serving

Peel and cut carrots down to bun length. Add to medium saucepan and cover with water. Bring to a boil and cook just until fork-tender, 6 to 8 minutes; do not overcook. Drain and rinse under cold water to stop additional cooking.
In a medium bowl, whisk together olive oil, soy sauce, liquid smoke, vinegar, paprika, mustard, onion powder, and garlic powder until well-mixed. Pour into a gallon-sized resealable bag and add carrots, tossing to coat evenly. Seal bag and refrigerate 8 hours or overnight.
Spray cold grates of grill with grilling spray and preheat to medium. Remove carrots from marinade, reserving marinade, and grill until grill-marked and heated through, about 2 to 3 minutes per side, basting with leftover marinade halfway through cooking.
Remove from grill, place in hot dog buns, and top each with heated Gardein® Plant-Based Chili. Garnish with cheese, onion, and jalapeño slices, if desired.
Carrot dogs can also be prepared on the stovetop. Heat a nonstick skillet over medium. Add marinaded carrots and 1/2 cup marinade and cook until heated through, about 7 minutes.
