FRIED GREEN TOMATOES
1 cup vegetable oil
1/3 cup dairy-free milk
3 tablespoons cornstarch
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 cup yellow cornmeal
4 slices green tomato
CAJUN SPECIAL SAUCE
1 cup vegan mayonnaise alternative
1/2 teaspoon Louisiana hot sauce
1/2 teaspoon dried thyme leaves
1/2 teaspoon garlic powder
1/2 teaspoon ground white pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon onion powder

Heat oil to 350°F in a skillet. While oil is heating, whisk together the soymilk, cornstarch, salt and pepper, in a small bowl. Transfer the cornmeal to a shallow dish. Dredge the tomato slices in the cornstarch mixture and let any excess drip off slightly. Dredge the tomatoes in the cornmeal and coat entirely. Repeat with each tomato. Shallow fry green tomatoes until golden brown and crispy, about 2 minutes per side.
Heat a 12-inch nonstick skillet over medium heat. Lightly spray insides of hamburger buns with olive oil spray. Toast buns in skillet, face-down until golden brown, 2 to 3 minutes. Remove from skillet and set aside.
Cook Gardein® Ultimate Burgers as directed on package, using skillet method. Remove from skillet; keep warm.
Place lettuce on the the bottom bun and top each with a burger and fried green tomato. Spread the Cajun mayonnaise on top buns and place on top of each burger. Serve.
