5 jalapeno peppers
1 bag (10 oz each) Birds Eye® Steamfresh Sweet Corn
6 slices bacon, chopped
1 pkg (8 oz each) cream cheese
2 cups shredded Pepper Jack cheese
1/2 teaspoon garlic salt
sliced green onion and chipotle chili powder, optional
tortilla chips, for serving

Heat broiler to high. Place jalapenos on a baking sheet and drizzle with a very small amount of vegetable oil. Broil until skins burst and flesh is tender, 5 to 10 minutes. Broilers vary so watch peppers carefully and turn once during cooking.
Place roasted jalapenos in a heat-proof bowl and cover with plastic wrap. Set aside to cool.
Microwave corn according to package directions. Heat an 8-inch cast iron skillet over medium heat. Add bacon to pan and cook until crispy, about 5 minutes, stirring frequently. Remove bacon to a paper towel-lined plate and pour off all but about 1 tablespoon bacon fat.
Pour corn into pan and cook until starting to brown, 3 to 5 minutes, stirring occasionally. Remove from heat while you chop your peppers.
Wearing gloves, cut stems off cooled peppers and scrape out the seeds. Remove as much of the papery skin as you can. Slice peppers into bite-sized pieces.
Stir cream cheese, 1 cup pepper Jack cheese, jalapenos, and garlic salt into roasted corn in pan until cream cheese is melted. Return pan to low heat if it has cooled too much to melt. Top with remaining pepper Jack and cooked bacon. Broil until cheese is melted and starting to brown, 3 to 5 minutes. Garnish with green onion and dust with a dash of chipotle chili powder, if desired. Serve your jalapeno popper corn dip with tortilla chips!
