1-1/2 pounds fingerling potatoes, halved
4 tablespoons avocado oil, divided
1 pkg (14 oz each) Gardein® Ultimate Plant-Based™ Bratwurst Saus'ge Links
1 small yellow onion, thinly sliced
1/2 cup chopped baby dill pickles
2 tablespoons minced garlic
1/4 cup cider vinegar
2 tablespoons whole grain mustard
1 tablespoon Dijon mustard
1 tablespoon firmly packed brown sugar
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped flat-leaf parsley
8 plant-based bacon strips, cooked and chopped
1 sliced green onion
sauerkraut, optional
additional Dijon mustard, optional

Preheat oven to 425°F. Toss potatoes with 1 tablespoon avocado oil and spread evenly on a large baking sheet. Bake 20 minutes or until tender rotating pan halfway through; set aside.
Cook brats according to package directions.
Meanwhile, heat remaining 3 tablespoons oil in a large skillet over medium-high heat. Add onion; cook 5 minutes or until golden, stirring frequently. Add pickles and garlic and cook 1 minute, until fragrant. Add vinegar, mustards, sugar, salt and pepper; cook and stir 1 minute.
Turn off heat, stir in potatoes and parsley. Pour into serving bowl and garnish with bacon and green onion.
To serve, plate bratwurst with potato salad, sauerkraut, and additional Dijon mustard if desired.
To make plant-based bacon, preheat oven to 400°F. Place wire racks inside 2 rimmed baking sheets. Combine 4 tablespoons nutritional yeast, 1 tablespoon garlic powder, 6 tablespoons olive oil, 6 tablespoons soy sauce, 1 teaspoon liquid smoke, 1 tablespoon maple syrup, ½ teaspoon salt and ½ teaspoon black pepper in a large bowl. Use scissors to cut 8 pieces rice paper into strips like bacon. Drag each rice paper sheet through the marinade. Place two rice paper sheets together to make a strip of bacon, then place on baking sheet rack. Repeat until all the rice paper is gone. Bake 10 minutes, rotating the sheet trays halfway through.
