1 cup non-dairy milk
1 tablespoon milled flax seed
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
4 slices (3/4-inch thick) bread
1/4 cup seedless jam
1/4 cup Earth Balance® Creamy Coconut & Peanut Spread

Mix together milk, flax meal, vanilla and cinnamon in a large, shallow bowl and place in the fridge to activate for 10 to 20 minutes.
Place a large skillet over medium-high heat.
Spread jam and peanut butter on bread slices, and create a PB&J.
Carefully dip the sandwich into the flax mixture, coating both sides.
Place sandwich in skillet and cook each side until golden brown.
Remove to a plate, slice and enjoy!
