PAM® Coconut Oil No-Stick Cooking Spray
1 cup almond flour/meal
2 cups shredded Cheddar cheese
1 pkg (1.25 oz each) taco seasoning mix, divided
3 tablespoons water
1 package DAVID® Pumpkin Seeds, Green Chili with Lime
2 cups unsalted dry roasted mixed nuts
1 package (5 oz each) Duke's® Smoked Shorty Sausages Hatch Green Chile, cut into bite size pieces
1/2 cup butter
1 tablespoon Frontera® Agave Red Chile Hot Sauce, optional

Preheat oven to 400°F and spray 2 large baking sheets with cooking spray. Pour almond flour, Cheddar cheese, 2 teaspoons of taco seasoning, and water into food processor. Process on low for 3 minutes or until dough forms a ball. Scrape sides if necessary.
Place dough between 2 pieces of parchment paper and flatten with rolling pin to 1/8 inch thickness. Cut into 1/2 inch squares and place on baking sheet. Bake 12 minutes, until lightly browned, flipping half way through. Cook in batches if necessary. Cool completely on wire rack.
In a large bowl combine pepitas, nuts, and sausages. Melt butter in a small sauce pan over low heat. Stir in remaining taco seasoning. Pour over dry mix and stir to coat. Add crackers and gently stir in. Taco snack mix must stay refrigerated until ready to eat.
