Easy chicken packet recipe made with chicken breast, frozen broccoli and fire roasted diced tomatoes seasoned with Italian dressing

Ingredients
  • 4 cups frozen broccoli cuts
  • 1 can (14.5 oz each) Hunt's® Fire Roasted Diced Tomatoes, drained
  • 1/2 cup Italian dressing
  • 4 boneless skinless chicken breasts (4 breasts = 1.25 lb)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
 
Directions
  1. Preheat oven to 450°F. Combine broccoli, drained tomatoes and dressing in medium bowl.
  2. Place four 18x12-inch pieces of heavy aluminum foil on counter. Place 1 chicken breast on each piece of foil; sprinkle with garlic powder, salt and pepper. Spoon broccoli and tomato mixture equally over each chicken breast. Double fold top and ends of each piece of foil, leaving space for steam to gather.
  3. Place packets on baking sheet; bake 25 to 30 minutes or until chicken is no longer pink in centers (165°F). Carefully open packets.

Really enjoyed this dish with some additions to the recipe and my 1 year old and husband who doesn't like tomatoes loved it too! I marinated the chicken in Italian dressing before cooking and cut the chicken into bite sized pieces before placing in the foil (really cut down on cook time and overdone veggies). I added half an onion and zucchini and a sprinkle of dill, parsley, and onion powder in addition to the spices listed. Delish!

Simple low-carb recipe you can out on the grill for easy cooking. I marinated the chicken breast in half (1/4 cup) of the Italian dressing and some paprika. Also used just plain olive oil to lightly toss fresh broccoli, carrot sticks and onion rings. Sprinkled some dry parsley and oregano over it for added taste.

I made this for a family of 4 and I used fresh Broccoli a onion, I also put celery seed, dill weed, crushed red pepper and Lipton onion soup mix... My children and husband said it was ok the 1st time, but this time there were no left overs they said it had more flavor...

This was super super easy, quick, and SO yummy. I'm one picky eater and this was tasty! I was also cooking for two. It's easy to cut the recipe or add to the recipe without messing anything up at all. This one is going into the recipe book. Next time I think i'll add some seasoning salt or garlic salt to add to the vegetable flavors!
