This was surprisingly tasty! I marinaded the chicken in one can of Hot Rotel (undrained), and added a healthy tablespoon of minced garlic, salt and pepper in addition to the Cumin and Chili Powder (I don't like bell peppers so you *might* need two cans if you keep that ingredient). DELISH! The mixture was a little watery so I drained it before serving. I also spread Wholly Guacamole's Spicy Guacamole on the tortilla and skipped adding any sour cream/cheese (save on calories). I also like Wholly Guacamole's Avocado Verde but is not easy to find at the grocery stores; best luck at Target. I like the Avocado Verde option better because it doesn't turn that yucky, dark green like regular guac can when stored in the fridge. Enjoy!
