Ingredients

  • PAM® Original No-Stick Cooking Spray
  • 1 carton (16 oz each) Egg Beaters® Original
  • 1 cup finely chopped fully cooked lean ham
  • 3/4 cup shredded Swiss cheese
  • 1/4 cup sliced green onions

Directions

  1. Preheat oven to 350°F. Generously spray 12 regular muffin cups with cooking spray. Pour Egg Beaters evenly into muffin cups (about 1/3rd full). Combine remaining ingredients in medium bowl. Spoon evenly over Egg Beaters.
  2. Bake 18 to 20 minutes or until puffed and set. Let stand in pan 2 minutes. Run table knife around edges of quiches to loosen.

First time making a quiche they were great. High protein add as much or as few veggies. Nice!! I give it a five rating

We love quiche, but the 45 minutes in the oven after prep work doesn't quite work for us during the work week. This came together in 10 minutes and were on the table 20 minutes later. I would add some herbs or seasoning to the eggs next time though as the ham and cheese were great, but the eggs needed something else. Oh, and hubby didn't even know they were egg beaters!

This is a great recipe. Traditional quiches usually take at least 45 mins. to bake and another 15 to prep. WIthin 30 minutes, we had these mini quiches on the table! They were so easy to make and were a hit with my family. I halved the recipe thinking that 12 would be too many, and boy was I sorry! It was also great having a recipe that was healthful. I served them mini quiches with roasted potatoes and a mixed green salad.

Easy, fast, and tasty. We love breakfast for dinner! So easy to make my 7 year old did it himself, well, almost, I chopped the ham. We used a mix of swiss and mozzarella and it was great! I think this recipe can be as creative as you want, add bacon, or potatoes, herbs or jalape?os, the sky is the limit! My kids couldn't get enough of them, another dinner hit!

This recipe is a great idea if you're having a big crowd over for brunch. Whip 'em up, pour them into muffin tins and toss them in the oven. They are quick, easy and tasty. They also allow you to focus on preparing other things while they bake. When I made them I threw in some chopped bacon and used cheddar in place of the swiss because we like it better. I made roasted potato wedges like the picture in the recipe shows as a side. Another great idea would be to finely chop some herbs you may have (or a pinch of dried) to add a different layer of flavor. I added some freeze dried chives that I usually have on hand for egg dishes. It added a little color and a nice flavor.
