Arrange oven racks in upper and lower third of oven. Preheat oven to 425°F.
Cook ground beef in large skillet until crumbled and browned, about 8 minutes; drain. Stir taco sauce into beef; simmer 2 minutes.
Pour 1 tablespoon vegetable oil onto a large baking sheet and use a pastry brush to spread it in an even layer all over the pan. Repeat with a second large baking sheet. Place tortillas in a single layer on baking sheets.
Sprinkle cheese over tortillas, covering as much of the tortilla as you can. Divide taco filling down the center of each tortilla. Bake 3 minutes.
Remove pans from oven and fold tacos in half. Use the back of a spatula to press them closed. Bake 5 minutes. Turn tacos and continue baking until lightly browned and crisp, 5 to 8 minutes.
Cool beef tacos 2 minutes and serve crispy beef mini tacos with avocado ranch for dipping!
