6 bone-in chicken thighs, skin removed (about 2 pounds)
1/2 teaspoon ground black pepper
2 teaspoons salt, divided
2 tablespoons olive oil, divided
1 yellow onion, chopped
1 small green bell pepper, cut into 1-inch pieces
1 small yellow bell pepper, cut into 1-inch pieces
1 large carrot, chopped
2 cups sliced white mushrooms
1 teaspoon fresh thyme, or 1/2 teaspoon dried, chopped
2/3 cup red wine (such as Pinot Noir or Cabernet Sauvignon)
2 cans (14.5 oz each) Hunt's® Stewed Tomatoes with Basil, Garlic & Oregano, undrained
1-1/2 tablespoons Hunt's® Tomato Paste
1/2 teaspoon crushed red pepper flakes
1/2 cup chopped pitted Greek kalamata olives, drained and chopped

Preheat oven to 375°. Season both sides of chicken thighs with pepper and 1 teaspoon of salt. Heat 1 tablespoon olive oil in oven-safe 5-quart Dutch oven over medium heat. Once hot, brown chicken thighs, about 4 to 5 minutes per side, then remove from pot. Cook in batches if necessary.
Add remaining olive oil to pot with onion; cook and stir 2 to 3 minutes. Add bell peppers, carrot, mushroom and thyme. Stir and cook additional 5 minutes or until vegetables are softened.
Add wine and stir well, scraping bottom of pot to release browned bits. Simmer 2 minutes. Add remaining salt, undrained tomatoes, tomato paste, and red pepper flakes. Place browned chicken pieces on top, then cover with tight-fitting lid.
Bake 45 minutes. Add olives to pot, re-cover and cook additional 15 minutes or until chicken shreds with a fork. Remove from oven and cool slightly. Serve meal over pasta, rice, or cauliflower rice for a lower-carb option.
