1 tablespoon vegetable oil
1/2 cup chopped yellow onion
2 cups Gardein® Plant-Based Ground Be'f
1 can (15 oz each) Manwich® Original Sloppy Joe Sauce
1 can (16 oz each) refrigerated southern homestyle buttermilk biscuits
2/3 cup shredded Cheddar and Monterey Jack cheese blend or plant-based alternative

Preheat oven to 400°F. Heat oil in large skillet over medium heat. Cook onion 2 minutes, pour in ground be'f, and sloppy joe sauce; cook until hot, 5 to 8 minutes.
Meanwhile, press 1 biscuit into bottom and up sides of 8 medium muffin cups, being careful not to tear dough. Place 1/4 cup be'f mixture in each cup. Bake 10 to 12 minutes or until biscuits are golden brown.
Sprinkle cheese evenly over top of each cup. Let stand 1 minute or until cheese softens. Carefully remove from pan.
