TEA CAKES
2 large eggs
1/2 cup vegetable oil
1/4 cup all-purpose flour
2 teaspoons ground ginger
1 pkg (15.25 oz each) Duncan Hines® Signature French Vanilla Cake Mix
HONEY WHIPPED CREAM
2 cups heavy whipping cream
2 tablespoons honey
PEACH JAM
4 large peaches or 6 small peaches
1 cup granulated sugar
1 teaspoon lemon juice

TO MAKE THE CAKES:
Preheat oven to 350F. Prepare an ungreased cookie sheet or 9”x13” baking pan.
Add eggs and oil to mixing bowl, then add flour, ginger and cake mix.
Mix until ingredients are fully incorporated and form a cookie dough-like texture.
Using an ice cream scoop, scoop out cakes onto cookie sheet, 2-inches apart to allow for spreading.
Bake 10 minutes and remove from oven, flatten slightly with a spatula and bake an additional 5 minutes. Insert a toothpick to check doneness; a clean toothpick means cakes are done.
Remove from oven and transfer to cooling rack.
TO MAKE THE CREAM: While the ginger tea cakes are cooling, prepare a clean mixing bowl.
Add whipping cream and honey to bowl.
Whip cream on medium-high until soft peaks form. Cover and place in the fridge.
TO MAKE THE JAM: Throughly wash peaches and cut into small pieces.
Add peaches, sugar and lemon juice to medium sized saucepan, simmer over medium-low heat for 20 mins. Stir periodically to prevent burning.
Sauce should darken in color and thicken.
Jam will continue to thicken while cooling.
Transfer to glass jars and allow to cool completely.
Top each ginger tea cake with a dollop of whipped cream and as much peach jam as you like!
