1/2 cup Earth Balance® Original Buttery Spread, divided
1 onion, thinly sliced
1 pkg (13.7 oz each) Gardein® Plant-Based Ground Be'f
1 tablespoon vegan Worcestershire sauce
1/2 cup water
2 tablespoons Hunt's® Tomato Paste
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
10 slices Swiss flavor vegan cheese slices
8 slices marble rye bread
Vlasic® Sandwich Dill Chips and yellow mustard, optional

Melt 2 tablespoons Earth Balance® in a large nonstick pan over medium heat. Add onions and cook, stirring frequently, about 5 minutes or until softened and translucent.
Add Gardein® Plant-Based Ground Be'f to pan and continue to cook 4 to 5 minutes or until lightly browned and heated through.
In a small bowl, whisk water, tomato paste, Worcestershire sauce, salt and pepper together until well combined. Stir into beefless grounds and continue to cook until thickened, about 3 minutes. Add 2 slices vegan Swiss, let melt, and stir to combine.
Preheat a large, nonstick pan or flattop griddle over medium.
Spread remaining Earth Balance® on both sides of bread slices, about 1 teaspoon per side. Add to preheated pan and toast 2 minutes, or until slightly golden, Flip 4 slices and top each with 1 slice cheese, about 2/3 cup beefless mixture, and a second slice of cheese. Top with remaining 4 slices of bread, toasted side down. Cook 3 to 4 minutes before flipping patty melts and cooking another 3 to 4 minutes, or until both sides are golden brown.
Remove from heat, slice with sharp knife, and serve your vegan patty melts with mustard and pickles, if desired. Enjoy!
