TURKEY GRAVY:
4 tablespoons unsalted butter
1 small onion, chopped
1/3 cup all-purpose flour
3 cups turkey or chicken stock
1 bay leaf
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried sage leaves
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
3 cups chopped cooked turkey
2 cups Birds Eye® Mixed Vegetables
DUMPLINGS:
2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
4 tablespoons unsalted butter, cut into small cubes
2 tablespoons chopped fresh herbs (parsley and/or chives) OR 1 tablespoon dried
3/4 cup lowfat buttermilk
1 egg

Preheat oven to 400°F. Spray large oven-safe skillet and a large piece of aluminum foil with cooking spray.
GRAVY: Melt butter in skillet over medium-low heat. Cook onion in butter until tender, about 5 minutes. Whisk in flour, cook 1 minute. Whisk in stock, bay leaf, thyme, sage, salt and pepper and bring to a boil, whisking constantly until thickened.
Stir in leftover turkey and mixed vegetables and bring to a boil. Reduce heat and simmer 10 minutes, until turkey and vegetables are heated through. Remove from heat and discard bay leaf.
DUMPLINGS: Stir together flour, baking powder, salt and baking soda in large bowl. Cut in cold butter until mixture resembles coarse crumbs. Stir in herbs, buttermilk and egg just until moistened and mixture forms a ball.
Drop 1/4-cup dumplings over turkey and gravy in skillet, about 12 dumplings total, evenly spaced over the top of the skillet. They will expand as they bake and cover the skillet.
Carefully cover skillet with foil, sprayed side down. Bake, covered, 25 to 30 minutes, until dumplings have expanded and they’re firm. If desired, remove foil and continue baking until dumplings are browned, about 10 minutes.
