Tender beef and noodles in a tomato-inspired stroganoff sauce

  • PAM® Original No-Stick Cooking Spray
  • 2-1/2 pounds boneless chuck roast, cut into large pieces
  • 1 can (28 oz each) Hunt's® Crushed Tomatoes
  • 1 can (8 oz each) Hunt's® Tomato Sauce
  • 1 can (6 oz each) Hunt's® Tomato Paste
  • 1 pkg (6 oz each) sliced fresh mushrooms
  • 2 pkgs (1.5 oz each) beef stroganoff seasoning mix
  • 2 cups dry egg noodles, uncooked
  • 1 cup sour cream

Purchase ingredients from Peapod or Amazon

  1. Spray inside of large slow cooker with cooking spray. Combine roast, tomatoes, tomato sauce, tomato paste, mushrooms and seasoning mix in slow cooker. Cook on LOW 8 hours or on HIGH 4 hours or until meat is tender.
  2. Stir in noodles the last 20 minutes of cook time and cook for remainder of time on HIGH. Stir in sour cream just before serving.

You would think folks would figure out this is uber tomato flavored by how many tomato products are needed.

My whole family went nuts for this, and I love it too because it's so very quick and easy to make. It has found a place in the Pantheon of our monthly recipe rotation.

We really liked this dish. My husband thought it was a bit too tomato-ey - but the kids and I loved it just as it was. I did have 3.25 lbs of lean thick cut stew meat and a 16 oz pkg of mushrooms. It handled it all very well. I accidently used an 8 oz can of garlic flavored sauce - I don't think it hurt anything. I added an extra 1 & 1/2 cups of noodles because it seemed to "saucy" and a 1/2 cup more sour cream before serving. A little salt to taste on your serving and it was quite tasty. It was wonderful for lunch the next day as well. Will definitely do again. I like the idea of adding an extra pkg of stroganoff seasoning and maybe a tablespoon or two of beef base.

I had high hopes for this, despite the naysayers; after all, I love pot roast, love beef stroganoff and thought the idea of adding tomato was an interesting twist. BUT it is too tomatoey!!! It was not even all that flavorful, other than the taste of tomato. I still think the idea is good and I would definitely try it again without the paste and sauce. If it needed additional moisture I would add beef broth to the crushed tomatoes and maybe some correct the seasoning. It also definitely needs more noodles!

I thought it was pretty was a little too tomatoey, so I added another pkg of beef stroganoff mix after about 4 hours of cooking...(it was done cooking after about 6 hours), and it tasted alot better..also add maybe another 1/4th cup of sour cream...i even added an extra cup of have to make it your own...but all in all, it was a good dinner I would make again!
