1 can (13.5 oz each) lite coconut milk
1 cup shredded cooked chicken
1/2 cup water
2 tablespoons fish sauce
2 tablespoons red curry paste
1 teaspoon chili garlic sauce or Sriracha sauce
6 thin slices peeled fresh ginger
Fresh cilantro, optional
