A Pot-Sized Pasta recipe with the flavor of tacos made in one pan using ground beef, zesty tomatoes and spaghetti, topped with sour cream

  • 1 pound extra lean ground beef (95% lean)
  • 1 pkg (1.5 oz each) mild taco seasoning mix
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 2-1/2 cups water
  • 8 ounces Spaghetti, uncooked
  • 6 tablespoons reduced fat sour cream

Purchase ingredients from Peapod or Amazon

  1. Cook beef in large skillet over medium-high heat 7 minutes or until crumbled and no longer pink, stirring occasionally.
  2. Cover, reduce heat and cook 10 minutes or until spaghetti is tender, stirring occasionally.Add taco seasoning, undrained tomatoes and water; stir to combine. Break spaghetti in half and add it to pot. Bring to a boil. Cover, reduce heat and cook 10 minutes or until spaghetti is tender, stirring occasionally.
  3. Top each serving with 1 tablespoon sour cream.

I was not sure about the sour cream, but wow it realy brought all the flavor home. Made this for my family and the reaction is all around the same. Two thumbs up and a circle:-)

I made this tonight and it was great. Unfortunately I did not have sour cream and know it would have been a great addition. I did add mexican cheese and a little bit of Cajun seasoning which just added to the taste. I made it just how the recipe said to and needed to cook it an additional 5 min so the noodles would soften and the liquid would absorb. Family loved it and will definable make it again.

I made the milder version of this recipe for my husband. Loved the flavor. I used regular diced tomatoes instead of Ro Tel original tomatoes. I cooked the pasta separately. Then I mixed all together. I can guarantee that I will make this again.

I didn't have the Ro Tel when I made this, so I had to add some extra water. I did put in some onions and a little bit of cream cheese though, to make it a little creamier and a different flavor. I do think it needed some more seasoning, having the Ro Tel probably would have made a difference, but I topped it with cheddar cheese and sour cream and it was delicious! Super easy and takes no time at all!
