2 cans (14.5 oz each) Hunt's® Diced Tomatoes with Roasted Garlic, undrained
2 cans (8 oz each) Hunt's® Tomato Sauce-No Salt Added
1 cup diced zucchini (1 cup = 1 med)
1 cup diced green bell pepper (1 cup = 1 med)
1/2 cup diced red onion
1 cup water
3 tablespoons fresh lemon juice
1/2 teaspoon garlic salt

Combine all ingredients in large bowl; mix well. Serve at room temperature or refrigerate and serve chilled.
For some crunch, top with garlic croutons when served.
For a slightly different flavor, substitute curry powder for the garlic salt, or add 1/2 teaspoon curry powder to the soup with the garlic salt.
