1 pkg (6.4 oz each) frozen Banquet® Brown 'N Serve(tm) Hot & Spicy Sausage links, cut into thirds
1-1/2 cups Southwest vegetable blend
4 eggs, lightly beaten
1/8 teaspoon salt
1/4 cup shredded Cheddar and Monterey Jack cheese blend
Toast, optional

Spray large nonstick skillet with cooking spray. Heat over medium heat; add sausage and cook 2 to 3 minutes or until browned.
Add vegetables to skillet; cook 3 to 5 minutes or until hot. Push sausage mixture to one side of skillet. Add eggs and salt; cook without stirring until edges and bottom begins to set. Gently turn to scramble; continue cooking until set. Combine with sausage mixture; top with cheese. Serve with toast, if desired.
