Overall, a pretty good...and more importantly...easy recipe. Prep time is minimal and can easily be done in the morning before going off to work. Trimming and cutting up the pork is probably the most time consuming, so that could be done the night before and kept in the refrigerator. Also, adding a couple of bay leaves won't hurt, as well as any of your favorite dry seasonings. Fresh herbs, like thyme, won't hold up to all day slow cooking, but dry will. Layer the vegetables in the bottom of the slow cooker, then the meat, dry seasonings and then cover it all with the pasta sauce. Cover and cook on low for 8 hours or more. When you come home from work, dinner is ready and will smell like Heaven!!
