Place a strainer over a large bowl and pour tomatoes in; reserve liquid. Place tomatoes in food processor or blender and puree until smooth.
Heat olive oil in 5-quart Dutch oven over medium heat. Season beef and pork with 1 teaspoon salt. Add meat to pan and cook until browned, about 10 minutes, turning occasionally. Remove meat from pan and set aside.
Add onion to pan and cook until very tender, about 8 minutes, stirring occasionally. Stir in garlic and anchovy fillets and cook until fragrant, about 1 minute. Carefully pour in tomatoes and reserved liquid; bring to a slow boil.
Stir in browned meat, remaining 1 teaspoon salt and bay leaves. Place lid on pot leaving it slightly ajar to allow for evaporation. Simmer until meat is starting to get tender, about 2 hours. Add Italian sausage to pot and continue cooking until meat is very tender and pork falls off the bone, 1 to 2 hours more.
Remove bay leaves and pork bones. Use the back of a spoon to mash the tender meat into shreds. Toss sauce with hot cooked pasta.
This sauce freezes really well. Cook only enough pasta for you to enjoy for one meal and freeze any leftover sauce
