1/4 cup finely chopped yellow onion
3/4 cup chopped fresh baby kale
1/8 teaspoon garlic salt
2 Smart Cups™ Egg Beaters® Original (2 Smart Cups = 1 cup)
2 tablespoons shredded Parmesan cheese

Spray large skillet with cooking spray; heat over medium heat. Add onion; cook 2 minutes or until crisp-tender, stirring occasionally. Add kale and garlic salt; cook and stir 1 minute more or until kale wilts.
Add Egg Beaters; cook without stirring until edges and bottom begin to set. Gently turn to scramble; continue cooking until set.
Top with cheese. Serve immediately.
