Tender rotini pasta bathed in a spicy sausage-tomato sauce and topped with mozzarella cheese

  • 8 ounces dry rotini pasta, uncooked (8 oz = 3 cups)
  • 1 pound hot Italian pork sausage links, casings removed
  • 5 green onions, cut diagonally into 1-inch lengths
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic & Oregano, undrained
  • 1/4 cup lowfat (1%) or whole milk
  • 1/4 cup chopped fresh basil leaves
  • 2 tablespoons Hunt's® Tomato Paste
  • 1-1/2 cups shredded part-skim mozzarella cheese (1-1/2 cups = 6 oz)

  1. Cook pasta according to package directions. Meanwhile, brown sausage in large skillet over medium-high heat, stirring frequently to break up sausage with spoon. Drain. Stir in onions; cook 3 minutes, or until crisp-tender, stirring frequently.
  2. Add diced tomatoes with their liquid, the milk, basil and tomato paste; mix well. Reduce heat to low; simmer 10 minutes, or until heated through, stirring occasionally.
  3. Drain pasta; place in large serving bowl. Add sausage mixture; mix lightly. Sprinkle with cheese.

My sister and I had some random food stuffs during the blizzard and took it upon ourselves to make something yummy. After looking up "pork sausage rotini", I found this. Because of the differences in ingredients we changed a few things around. So we ended up using double the rotini noodles, tomatoes, and tomato paste, which made the recipe great actually! If we hadn't done this it would've been far too much meat, which is why I gave such a low rating. And it also would definitely not have been enough for four people. But besides that, be sure to add plenty of spice to this dish if you want it to be flavor packed, otherwise it will be pretty bland.

Not sure why the need to take a basic good thing and complicate it... I don't think the milk does much here, and I buy the seasoned Tomatoes so in a pinch I don't have to add fresh chopped basil and green onions, which I don't always have on hand... so not bad, just over done for a quick comfort food meal.
