ROASTED VEGETABLES:

1 bag (9.5 oz each) Birds Eye® Steamfresh Rainbow Cauliflower
1 medium red bell pepper, cut in 1-inch pieces
1 medium orange bell pepper, cut in 1-inch piecces
1 cup cherry tomatoes
1/2 red onion, cut in 1-inch pieces
2 cloves garlic, finely chopped
1/3 cup olive oil
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
PASTA SALAD:
8 ounces dry orzo pasta, uncooked
8 ounces feta cheese, cut into 1/2-inch pieces
4 scallions, sliced (white and green parts)
1/4 cup pine nuts, toasted
1/4 cup fresh basil leaves, torn
DRESSING:
1/3 cup lemon juice
1/3 cup extra virgin olive oil
1/2 teaspoon kosher salt
1/8 teaspoon ground black pepper

ROASTED VEGETABLES: Preheat oven to 425°F. Spray large rimmed baking sheet with cooking spray. Pour cauliflower, bell peppers, tomatoes, onion, garlic, olive oil, salt, and pepper onto baking sheet and toss to coat with oil. Roast for 30 to 35 minutes, until browned, turning once.
Cook the orzo pasta according to package directions. Drain and transfer to a large bowl.
LEMON VINAIGRETTE DRESSING: Whisk together lemon juice, olive oil, salt and pepper in small bowl.
ORZO PASTA SALAD: Add the roasted vegetables to the pasta, scraping all the liquid and seasonings from the roasting pan into the bowl. Pour dressing over pasta and vegetables and stir well. Refrigerate 30 minutes, just until cooled.
Stir feta, scallions, toasted pine nuts and basil into pasta salad. Serve orzo salad at room temperature.
