Spray large bowl, rubber spatula and piece of waxed paper with cooking spray; set aside. Prepare both bags of popcorn according to package directions. Remove all unpopped kernels and divide popped corn into 3 medium bowls, about 7-1/2 cups in each bowl.
Place 1-1/2 cups marshmallows and 1-1/2 tablespoons Parkay in microwave-safe bowl; microwave on HIGH 40 seconds or until marshmallows melt and mixture blends when stirred. Stir in red food coloring.
Pour marshmallow mixture over popped corn in first bowl. Toss with rubber spatula to coat. Divide mixture and shape into 4 balls. Place on waxed paper.
Repeat steps 2 and 3 using blue food coloring and second bowl of popped corn. Finally, repeat steps 2 and 3 with remaining marshmallows, Parkay and popped corn to make uncolored popcorn balls.
