Preheat oven to 350°. Spray two 8-inch round cake pans with baking spray.
Blend cake mix, water, egg whites and oil in a large bowl with an electric mixer on low speed for 30 seconds or until moistened. Beat an additional 2 minutes on medium speed.
Divide batter evenly into pans and bake for 24 to 28 minutes, until toothpick inserted into center of cakes comes out clean. Remove from oven and cool in pans on wire racks for 15 minutes. Remove cakes from pans and cool completely.
Place bottom cake layer on cake stand or serving plate. Spread a layer of frosting about 1/4-inch thick on bottom layer. Place top cake layer on frosting; use remaining frosting to frost top and sides of cake. Decorate sides and top of cake with rainbow sour candy strips and rainbow fruit candies. Slice pride cake and serve.
For a festive rainbow surprise, after mixing cake batter divide batter evenly into six small bowls, then add several drops each of red, orange, yellow, green, blue and purple food coloring and mix to create six separate batter colors. For bottom cake layer, pour purple batter into center of prepared pan first, followed by blue batter then green batter to create a layered effect. For top cake layer, pour yellow batter into center of prepared cake pan first, followed by orange batter then red batter. Continue with recipe, then once cake is ready to decorate, ensure cake layers are assembled with red cake being at the top of the top layer and purple cake being at the bottom of the bottom layer. Slice and surprise!
