

Pretzel Bites with Mustard Dipping Sauce

3/4 cup warm water
1-1/2 teaspoons granulated sugar
1 teaspoon active dry yeast
2 cups all-purpose flour
1 teaspoon salt
2 tablespoons unsalted butter, melted
PAM® Baking Spray
1 cup boiling water
2 tablespoons baking soda
1 egg yolk beaten with 1 tablespoon water
1 teaspoon pretzel salt or coarse sea salt
1/4 cup mayonnaise
3 tablespoons Gulden's® Spicy Brown Mustard
1 tablespoon cider vinegar
1 tablespoon honey
Pour warm water, sugar and yeast into bowl of stand mixer; let sit 5 minutes. Add flour, salt and butter and mix on low speed using the dough hook attachment until well combined. Increase speed to medium and knead until dough is smooth, about 3 to 4 minutes.
Spray medium bowl with baking spray. Place dough in bowl, cover and let sit in a warm place until doubled in size, about 45 to 50 minutes.
Preheat oven to 425°F. Spray baking sheet with baking spray. Stir together boiling water and baking soda in small baking dish; cool to lukewarm.
Spray work surface lightly with baking spray. Turn dough out onto surface and divide into 4 equal pieces. Roll and shape each piece into a 12-inch rope. Cut each rope crosswise into 10 pieces.
Place dough pieces in cooled baking soda water and toss to coat. Let sit 2 minutes. Place on baking sheet. Brush with egg yolk and sprinkle with salt. Bake 10 to 12 minutes, until golden brown.
Meanwhile, stir together mayonnaise, mustard, vinegar and honey in small bowl. Serve pretzel bites with mustard sauce for dipping.
