An easy breakfast recipe of shredded hash brown potatoes, Egg Beaters, sausage, red bell pepper and Cheddar cheese baked together

  • PAM® Original No-Stick Cooking Spray
  • 1 carton (16 oz each) Egg Beaters® Original
  • 1/2 cup fat free milk
  • 1/4 teaspoon garlic salt
  • 4 frozen Banquet® Brown 'N Serve™ Turkey Sausage links, sliced
  • 2 cups refrigerated shredded hash brown potatoes
  • 1/2 cup chopped red bell pepper
  • 1/2 cup shredded sharp Cheddar cheese

Purchase ingredients from Peapod or Amazon

  1. Preheat oven to 350°F. Spray 8x8-inch glass baking dish with cooking spray; set aside.
  2. Combine Egg Beaters, milk and garlic salt in large bowl. Add sausage, potatoes, bell pepper and cheese; stir to combine. Place mixture in dish.
  3. Bake 45 minutes or until knife inserted in center comes out clean. Cool slightly before serving.

People ask me to bring my Egg Casserole all the time!! With Egg Beater flavors it is fun to change up the spice level. The most popular is: 2 16 oz cartons Southwest Egg Beaters, 1 16 oz carton plain Egg Beaters, 1 Package of Simply Potatoes Southwest, 2 Cups of Mexican fine shredded cheese, 1 package of Jimmy Dean Turkey Sausage Crumbles and 2 Cups of fine shredded cheddar cheese or casserole blen for topper. Mix all ingredients, add to 13 x 9 Pan, top with cheddar cheese or a casserole blend. Bake at 350 for about an hour. To reduce spice....change up Egg Beater flavors and hasbrowns. This is a recipe you can have fun making to accomodate your hungry crowd!! :>)

I made a similar but easier version using the hash browns that already have onions and peppers. I also added frozen mushrooms, onions and garlic mix to hash browns. Instead of sausage, I used cubed ham.

I just made this recipe through the Allstar program on Allrecipes. It is fabulous! I would be very proud to serve this to my family or guests and happy to know it is a lot healthier than the typical breakfast casserole. Pam made it very easy to remove from the pan and the tip using Pam on the knives and spatula made for easy removal and clean-up.

Been making this for years only for Christmas my family calls it, "Christmas Breakfast Casserole". I use real eggs, bell pepper, onion, sour cream, hot pork sausage, cream of mushroom soup!My family wish I would make it more often. If I did it would not be as special breakfast anymore!
