1 pkg (15.25 oz each) Duncan Hines® Classic Yellow Cake Mix
3 eggs
1/2 cup vegetable oil
1 cup water
3/4 cup rainbow sprinkles or small candies
1 container (16 oz each) Duncan Hines® Creamy Vanilla Frosting

Preheat oven to 350°F. Place liners in 24 muffin cups.
Blend cake mix, water, oil and eggs in a large bowl with an electric mixer on low speed for 30 seconds. Beat at medium speed for 2 minutes. Divide batter evenly into pans. Bake 18 to 21 minutes, until toothpick inserted in center comes out clean. Remove cupcakes from pans and cool completely, about 15 minutes.
Cut a 1/2-inch deep circle from the center of each cupcake using a small paring knife. Place about 1-1/2 teaspoons rainbow sprinkles in each hole and top with cut out pieces.
Stir a few drops food coloring into frosting, if using, and frost each cupcake.
Get the kids involved with assembling these pinata surprise cupcakes by filling the holes with sprinkles, replacing the cut-out cupcake pieces, frosting the cupcakes, and decorating the tops.
