Grilled pizza recipe starts with a flatbread crust topped with pesto, cheese, flavorful stewed tomatoes and ripe olives

  • PAM® Grilling Spray
  • 4 white flatbreads (6 inch)
  • 1/3 cup refrigerated basil pesto
  • 1 cup shredded part-skim mozzarella cheese
  • 1 can (14.5 oz each) Hunt's® Stewed Tomatoes, drained
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons sliced ripe olives

Purchase ingredients from Peapod or Amazon

  1. Spray cold grate of gas grill with grilling spray. Preheat grill for medium heat.
  2. Place flatbreads on baking sheet; spread each evenly with pesto. Top flatbreads with mozzarella cheese, drained tomatoes, Parmesan cheese and olives. Grill 6 to 8 minutes or until cheese melts and flatbreads are browned lightly.

I add Hormel turkey pepperoni. 5 slices per pizza adds 70 calories but is more flavorful than regular pepperoni. I also bake frozen Digiorno pizzas on my Tru-infra gas grill.

I love making these for lunches or a dinner when it's just me...I also use pizza dough from the pizza parlor or even the grocery store, but I've made them with plain Naan bread & even smaller ones on Bialy halfs

I use pizza dough, rolled out into same size as pita breads, evoo on both sides w/salt, pepper, granulated garlic then grill them. Add a bit of pesto, sauce or whatever toppings then either re-grill till cheese melts or re-heat in the oven at 400 for about 10 minutes. THIS IS DELICIOUS!
