A delicious smashed cauliflower recipe flavored with Parmesan cheese and green onions -- a great alternative to mashed potatoes

  • 1 pkg (16 oz each) frozen cauliflower florets
  • 1/4 cup water
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons sliced green onions
  • 2 tablespoons Parkay® Original Spread-tub
  • 1/4 teaspoon salt

Purchase ingredients from Peapod or Amazon

  1. Place cauliflower and water in medium microwave-safe bowl; cover. Microwave on HIGH 10 to 12 minutes or until tender, stirring once halfway.
  2. Mash cauliflower with potato masher until smooth. Stir in cheese, onions, Parkay and salt.
