PAM® Original No-Stick Cooking Spray
1 pkg (16 oz each) frozen cauliflower florets
1/3 cup plain nonfat Greek yogurt
1/4 cup chopped Slim Jim® Hickory Smoked Bacon Jerky, divided
1/4 cup sliced green onions, divided
2 tablespoons Parkay® Original Spread-tub
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup shredded sharp Cheddar cheese

Preheat oven to 400°F. Spray 8x8-inch glass baking dish with cooking spray; add cauliflower. Cover and microwave on HIGH 10 minutes or until tender, stirring once halfway.
Mash cauliflower with potato masher into very small pieces. Stir in yogurt, 2 tablespoons jerky, 2 tablespoons onions, Parkay, salt and pepper. Sprinkle with cheese.
Bake 10 minutes or until cheese melts; top with remaining 2 tablespoons each jerky and onions just before serving.
Light sour cream may be used in place of Greek yogurt, if desired.
