A leftover turkey recipe of spaghetti, turkey and mushrooms in a creamy sauce with zesty tomatoes for a flavor kick

  • 8 ounces dry spaghetti pasta, uncooked
  • PAM® Original No-Stick Cooking Spray
  • 1/2 cup chopped yellow onion
  • 1 cup sliced fresh mushrooms
  • 2 cups chopped cooked turkey
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 can (10-3/4 oz each) condensed cream of mushroom soup
  • 3/4 cup water
  • 3/4 cup shredded Cheddar cheese, divided

Purchase ingredients from Peapod or Amazon

  1. Cook pasta according to package directions, omitting salt. Meanwhile, spray large skillet with cooking spray; heat over medium-high heat.
  2. Add onion; cook 3 minutes or until softened. Add mushrooms; cook 5 minutes more or until mushrooms are tender and lightly browned.
  3. Add turkey, undrained tomatoes, soup, water and half of cheese to skillet; stir to combine. Stir in cooked pasta; heat until mixture is hot and pasta is coated. Top with remaining cheese.

I made just 2 changes, whole wheat pasta and fat free half and half. It was delicious! Now I know what I can do with my leftover turkey!

Loved this recipe with a few additions. I add some of my leftover dressing, salt, pepper, and alittle chicken broth. Yum yum!

Just made this for supper tonight and we liked it but next time I will use the hot Ro*tel not the original as it seemed to need just a little something extra and I think this would be the kick it needs. Will be making again

I added some black pepper seeing there were no spices or seasonings in the recipe. The Rotel did give it a kick, though. The pepper also helped in the flavor dept. The leftovers came to work with me. It heated up well.

This was awesome. I wanted to try something different besides the same old same old with the turkey leftovers and this was a real hit! My boyfriend even wanted these leftovers to take to work with him for lunch.
