COOKIES: Preheat oven to 350°F. Spray 2 large baking sheets with cooking spray.
Blend cake mix, butter, cream cheese, egg, lime zest, and lime juice in a large bowl with an electric mixer on low speed until cake mix is moistened, about 30 seconds. Beat on medium speed until soft dough forms, about 1 minute.
Drop cookie dough onto baking sheets in 1-1/2 tablespoon portions, leaving at least 1-inch between cookies. Flatten cookies to 1/4-inch thick with the palm of your hand. Bake 12 to 15 minutes, until edges are lightly browned, and center is firm.
Cool cookies completely on wire racks before frosting and decorating.
DECORATING: Scoop frosting into a bowl and stir in lime zest. Stir in a few drops of green and yellow food coloring until the frosting is lime green.
Frost cooled key lime coconut cookies with lime frosting and decorate with sprinkles. Store cookies in an airtight container.
