2 tablespoons olive oil
1 cup yellow onion, chopped small
1 tablespoon garlic, minced
1 teaspoon grated fresh ginger
2-1/2 tablespoons Jamaican curry powder
1-1/2 teaspoons kosher salt
1/4 teaspoon ground black pepper
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1-1/2 pounds fingerling or new potatoes, sliced into 1/4-inch coins (about 4 cups)
1 cup low-sodium ready to serve chicken broth
1 can (14 oz each) coconut milk
1 tablespoon Worcestershire sauce
1-1/2 teaspoons white wine vinegar
1 teaspoon hot sauce, optional
1 bag (10 oz each) Birds Eye® Steamfresh® Long Grain White Rice
2 tablespoons chopped cilantro, optional

In a medium saucepan over medium heat, add olive oil and heat until shimmering. Add onion, garlic and ginger; stir and cook 5 minutes or until onions are translucent. Add curry powder, salt and pepper.
Add chicken and cook 8 to 10 minutes, stirring frequently. Add potatoes, broth, coconut milk, Worcestershire sauce, vinegar and hot sauce if desired.
Reduce heat to medium-low and simmer until chicken is cooked and potatoes are tender, about 30 to 40 minutes.
Cook rice according to package directions. Divide rice evenly between four bowls and ladle curry mixture next to or on top of rice. Garnish with cilantro if desired; serve.
Jamaican curry powder contains a generous amount of allspice, which gives this curry dish an interesting twist of flavor. Find it at a specialty spice store or specialty grocer near you, or look for it online.
