1/3 cup granulated sugar
1/4 cup Swiss Miss® Dry Milk
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons caraway seeds
4 tablespoons unsalted butter, cut in small pieces
1 cup raisins or currants
1 cup lowfat buttermilk
2 eggs
2 tablespoons water

Preheat oven to 350°F. Spray 9-inch round pan with baking spray.
Whisk together flour, sugar, dry milk, baking powder, baking soda, salt and caraway seeds (if using) in large bowl. Toss butter pieces with flour mixture and use your hands or a pastry blender to mash the butter into the flour until it is in pea-sized pieces. Stir in raisins.
Make a well in the center of the flour mixture. Pour buttermilk, water and eggs into well and whisk liquids until blended. Switch to a wooden spoon or rubber spatula and stir until flour and liquids are well blended.
Pour batter into pan and shape into a 7-inch round. Cut a 4-inch cross across the top, about 1/4-inch deep. Bake 40 to 45 minutes, until toothpick inserted in center comes out clean. Cool on wire rack 20 minutes, remove from pan and cool completely. Slice Irish soda bread and serve.
