A summer tomato soup recipe combines fresh vegetables with tomatoes for a quick no cook soup

  • 1 can (14.5 oz each) Hunt's® Petite Diced Tomatoes, undrained
  • 1 can (15 oz each) OR 1 carton (14.8 oz) Hunt's® Tomato Sauce
  • 1 cup chopped cucumber
  • 3/4 cup chopped yellow bell pepper (3/4 cup = 1 medium pepper)
  • 1/3 cup chopped sweet onion
  • 1/2 cup water
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground red pepper

Purchase ingredients from Peapod or Amazon

  1. Combine all ingredients in large bowl; stir well. Serve at room temperature or refrigerate and serve chilled.

I tried this recipe, and added a tablespoon of sugar. My sons loved it, and I can't get them to eat much of anything. This will be a recipe we will use over and over again. Thank you so much for sharing.
