Spray cold grate of outdoor grill with grilling spray. Prepare grill for medium heat. Beat honey, mustard, mint, salt and pepper with wire whisk until well blended. Remove half of the honey glaze; set aside for brushing onto cooked patties (step 3).
Shape ground turkey into 5 (1/2-inch-thick) patties. Brush both sides of patties with some of the remaining glaze. Grill 5 to 6 minutes, or until bottom of patties are golden brown. Turn patties over; brush with the remaining glaze. Continue grilling 8 to 9 minutes, or until patties are no longer pink in the center and meat thermometer reaches 165°F.
Remove patties from grill; brush with reserved glaze. Set aside and keep warm. Brush pineapple slices with oil. Grill 1 to 2 minutes on each side, or until golden brown on both sides. Meanwhile, grill buns, cut sides down, 20 to 30 seconds, or until lightly toasted. Place 1 burger on bottom half of each bun; top with 1 pineapple slice. Cover with arugula and top of buns.
