Italian sausage and a bounty of vegetables join together in this flavorful soup

  • 1/2 pound Italian pork sausage links, casings removed
  • 1/2 cup chopped onion
  • 2 cans (14 oz each) reduced-sodium chicken broth
  • 1 can (14.5 oz each) Hunt's® Diced Tomatoes with Roasted Garlic, undrained
  • 1 can (15 oz each) cannellini beans, drained, rinsed
  • 1 pkg (9 oz each) baby spinach leaves

Purchase ingredients from Peapod or Amazon

  1. Cook sausage and onion in large saucepan over medium-high heat until sausage is crumbled and no longer pink, stirring occasionally; drain.
  2. Add broth, undrained tomatoes and beans; mix well. Bring to a boil; cook 5 minutes, stirring occasionally.
  3. Stir in spinach; cover. Cook 5 minutes or just until spinach is wilted, stirring occasionally.

This a go to soup for me and everyone who I have shared it with loves it! I use spicy/hot Italian sausage and use chicken stock instead of broth finished off with some freshly grated Parmesan cheese and served with some crusty bread and butter. Delicious! A double batch lasts a few days in our home and it tastes even better the longer it sits in the fridge. A must try!

I made this soup a few nights ago and it was not only a cinch to make but was delicious too. I doubled the recipe so that I could enjoy it for a few days. I used a mix of sweet and hot Italian sausages. The mix was just right. I would give this recipe five stars and will be making it again next week to share with my mother.
