1 large avocado, pitted, peeled,
1/3 cup vegan mayonnaise
1 clove garlic
3 tablespoons lime juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon ground cumin
3 medium plum tomatoes, chopped
1/2 cup chopped white onion
1/2 medium cucumber, chopped
1 small jalapeno pepper, chopped
1/4 cup fresh cilantro, chopped
2 cups Gardein® Plant-Based Ground Be'f
1 pkg (1.25 oz each) taco seasoning mix
2/3 cup water
8 vegan corn tortillas (6 inch)
1 tablespoon vegetable oil
1 cup Rosarita® Vegetarian Refried Beans
1 cup vegan shredded cheese

Blend avocado, mayonnaise, 1 tablespoon lime juice, garlic, 1/4-teaspoon salt, 1/8-teaspoon black pepper, and cumin in a food processor until smooth. Add up to 1/3 cup water to make a thinner sauce if you like to drizzle. Transfer to a bowl, cover, and refrigerate.
Stir tomatoes, onion, cucumber, jalapeno, cilantro, remaining 2 tablespoons lime juice, 1/4-teaspoon salt, and 1/8-teaspoon pepper together in large bowl. Cover and refrigerate.
Heat large nonstick skillet over medium heat. Add ground be’f, cover, and cook for 6 minutes stirring occasionally. Add taco seasoning and 2/3 cup water. Cook uncovered for 7 minutes, stirring occasionally. Remove from heat and cover.
While ground be’f is cooking, lightly brush oil onto both sides of each tortilla and air fry 3 to 4 minutes at 350°F until crispy and golden brown.
Spread 2 tablespoons of refried beans onto each tortilla. Sprinkle 2 tablespoons of cheese over beans. Air fry for an additional 2 to 3 minutes to melt the cheese.
Top tostadas with 1/4-cup ground be’f and 2 tablespoons Pico de Gallo. Garnish tostadas with a drizzle of avocado sauce. Serve, and enjoy!
