Preheat oven to 350°F. Spray two 8-inch round cake pans with baking spray.
Blend cake mix, water, eggs, and oil in a large bowl until moistened, about 30 seconds. Beat on medium speed 2 minutes. Divide batter evenly into pans.
Bake 24 to 28 minutes, until toothpick inserted in center comes out clean. Cool on wire rack 15 minutes. Remove from pans and cool completely.
Scoop frosting into 4 small bowls, dividing it equally between each. Dye each bowl of frosting a different color of your choice, we chose purple, violet, aqua and blue for a mermaid theme. You could choose pastels for a spring theme, primary colors for a young child’s birthday or just do one color if you prefer.
Place each different frosting color into a piping bag or resealable freezer bag. Place the bag inside a glass and fold it over to make it easier to fill the bag. Cut off a small corner, about 1/2-inch opening, from each bag.
Place one cooled cake layer on serving plate. Using roughly an equal amount of each color, squeeze frosting onto top of first layer, you just need about an 1/8-inch-thick layer. Use a table knife or an offset spatula to blend the colors and fill in the gaps. You won’t see this until you cut into it so just have fun with it! Top with second cake layer.
Using the color pattern of your choice pipe 4 dots down the side of the cake layers. Each dot should be about an inch in diameter. Use a spoon to swipe through each dot to make a petal shape. Be sure to use a different spoon for each color dot. Repeat until the whole cake is covered. Use any remaining frosting to frost the top of the cake and use a knife or spatula to gently smooth it out and blend the colors.
Serve your petal cake and enjoy!
