4 tablespoons unsalted butter, melted
1 egg
1 tablespoon water

Adjust oven racks to upper and lower third of oven. Preheat oven to 375°F. Spray two large baking sheets with cooking spray.
Stir together cookie mix, melted butter, egg and water in a medium bowl until well blended.
Divide dough into 24 even portions, about 1 tablespoon each, and roll each into a ball. Pour sprinkles and cookie pieces onto a plate and dip top of each ball. Place on baking sheets leaving at least 1-inch between cookies.
Bake 11 to 13 minutes, until edges are set but centers are still soft. Cool on pan 2 minutes before removing to wire rack to cool completely.
Spread filling on flat side of half of the cookies. Top frosted cookie with another cookie to create cookie sandwiches.
