Creamy chicken and tomato casserole combined with flour tortillas for a southwestern flare

Ingredients
  • PAM® Original No-Stick Cooking Spray
  • 2-1/2 cups cubed cooked chicken
  • 2 cups shredded Cheddar cheese, divided (2 cups = 8 oz)
  • 1 can (10-3/4 oz each) cream of mushroom soup
  • 1 can (10-3/4 oz each) cream of celery soup
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 can (8 oz each) diced green chilies
  • 3/4 cup sliced green onions
  • 12 flour tortillas (8 inch), each cut into 6 triangular wedges
  • 1 tablespoon sliced green onions
 
Directions
  1. Preheat oven to 375°F. Spray 2-1/2-quart or 11x7-inch baking dish with cooking spray; set aside.
  2. Combine chicken, 1 cup of the cheese, both soups, undrained tomatoes, green chilies and the 3/4 cup green onions in large bowl; set aside. Mix 60 tortilla wedges into chicken mixture; spoon mixture into baking dish.
  3. Bake uncovered 30 minutes or until hot.
  4. Remove from oven and tuck the remaining 12 tortilla wedges around inside edge of baked dish; top with the remaining 1 cup cheese. Bake an additional 5 minutes. Garnish with the 1 tablespoon green onions.

My family has been making this casserole for years! It is so easy, and delicious. I add some olives and make guacamole for when it comes out of the oven:) yummy!

I made this recipe the same way except used a 4oz can of green chiles, which my teenagers thought that it had too much chiles. I think with the can of Rotel with chiles and the 4oz can of green chiles it's just the right amount. I like King Ranch chicken also.

My family loves Dude Ranch Chicken. Preparation time is more then 10 minutes when cooking the chicken is included but well worth it.

Great flavor! Instead of mixing the tortillas into the chicken mixture, I used the cut up tortillas like lasagna noodles

I've made this recipe for years. My family just loves it. I try to make it with a 4oz. can of mild chiles and a 4oz. can of hot chiles. The "toasted" tortilla triangles around the edges are a texture treat too. (I use a pizza cutter on the tortilla sectioning.) yum yum!
